A few weeks ago, she sent me a copy to review and although she isn&#8217;t a &#8220;paleo&#8221; website, I was thrilled to find that 2/3 of the recipes were paleo-friendly!! Leanne&#8217;s pictures are MOUTH-WATERING!! I want to eat the desserts right off the pages. All the recipes are grain-free, gluten-free, refined sugar-free, peanut-free, corn-free, soy-free and dairy-free! 				<content:encoded><![CDATA[<p>Back in February, while doing the Whole30, I came across <a href="http://www.healthfulpursuit.com/2011/12/sugar-free-coconut-almond-bark/" target="_blank">this recipe </a>for Coconut Almond Bark (no sugar added). I checked-it out. I was skeptical to say the least, but decided to try it. Coconut butter? What was that. I certainly didn&#8217;t have that in the house and thought it surely cost an arm and a leg&#8230;but then I found a few recipes for coconut butter and decided to try it! I tried making the coconut butter in my cheapo/small food processor and it worked (even though my food processor isn&#8217;t super-thrilled about it&#8211;it doesn&#8217;t get as angry as when I try to grind nuts <img src='http://cdn.unrefinedkitchen.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Someday I hope to own a <a href="http://www.amazon.com/gp/search/ref=as_li_qf_sp_sr_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;index=aps&amp;keywords=blendtec&amp;linkCode=ur2&amp;tag=theunrekitc-20" target="_blank">BlendTec</a> that will grind coconut and nuts without batting an eye! I continued on to making the recipe and was SHOCKED how delicious it was. I was even more shocked when some of my friends/family who don&#8217;t eat paleo liked it as well (and there is NO sweetener in it!).</p>
<p>Anyway, I contacted Leanne from <a href="http://www.healthfulpursuit.com">www.healthfulpursuit.com</a> and asked her if I could link to it on my site! She agreed so here we are! Her recipe for the Coconut Almond Bark is <a href="http://www.healthfulpursuit.com/2011/12/sugar-free-coconut-almond-bark/" target="_blank">here</a>. If you aren&#8217;t avoiding sweeteners, you can add 1-2 Tbsp. of honey to the batch to make it a bit sweeter. I also ran out of almond extract (after making it multiple times) and just subbed more vanilla for the almond extract.</p>
<p>Leanne&#8217;s <a href="http://www.healthfulpursuit.com/2011/12/sugar-free-coconut-almond-bark/" target="_blank">Coconut Almond Bark recipe</a> sent my mind spinning with variations that would be just as yummy! And that is how &#8220;Almond Butter Coconut Bark&#8221; was born&#8230;Sorry to be confusing about the names! Hoping that the pics with the names on them clarifies it a bit!</p>
<p>As far as the coconut butter goes, here are two recipes that I found helpful: <a href="http://www.theclothesmakethegirl.com/2011/02/22/homemade-coconut-butter-f-yeah/" target="_blank">Homemade Coconut Butter </a>and <a href="http://cookieandkate.com/2012/toasted-coconut-butter/" target="_blank">Toasted Almond Butter </a>(though I didn&#8217;t toast mine&#8230;it sounds yummy!) I will explain how I made mine below.</p>
<p><strong>Almond Butter Coconut Bark</strong></p>
<p>Ingredients:<br />
1 1/3 cup coconut butter (see my recipe for homemade coconut butter below)<br />
2/3 cup pecans<br />
1/2 cup sliced almonds<br />
2 Tbsp. <a href="http://store.nutiva.com/aff/BDEE4790FE32650135E9BE5C22051500/index.html" target="_blank">coconut oil </a>+ 2 tsp. for toasting nuts<br />
1/4 cup <a href="http://www.amazon.com/gp/search/ref=as_li_qf_sp_sr_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;index=aps&amp;keywords=maranatha%20almond%20butter&amp;linkCode=ur2&amp;tag=theunrekitc-20" target="_blank">almond butter</a><br />
1/2 tsp. cinnamon<br />
1 tsp. vanilla<br />
3/4 cup raisins<br />
3/4 cup dried, unsweetened coconut for topping</p>
<p>Directions:<br />
1. Line a 9&#215;13 pan with parchment paper.<br />
2. Put pecans, sliced almonds and 2 tsp. coconut oil in a skillet and cook over medium-low heat, stirring frequently to avoid burning. Cook until ever-so-lightly browned/toasted.<br />
3. Mix 2 Tbsp. coconut oil with the coconut butter. If not using fresh-made coconut butter that is still runny, soften coconut butter in a double boiler (with the coconut oil).<br />
4. Add toasted nuts, almond butter, vanilla, cinnamon and raisins to the coconut butter mixture.<br />
5. Spread mixture evenly in 9&#215;13 pan lined with parchment paper. You may have to move around the raisins/nuts with your spatula so that they are evenly distributed.<br />
6. Sprinkle 3/4 cup dried shredded coconut on top of the bark. Press down with a spatula. Place pan in fridge to cool until hardened. (I&#8217;m not sure how long this took&#8230;maybe an hour?)<br />
7. Break Almond Butter Coconut Bark into pieces and enjoy!!</p>
<p>*This is best kept in fridge to keep its firm texture.</p>
<p><strong>Jen&#8217;s Simple Coconut Butter</strong> (derived from the two recipes linked-to above)</p>
<p>Yield: approximately 1 1/2 cups coconut butter</p>
<p>Ingredients:<br />
4 1/2 cups unsweetened, shredded coconut<br />
2 tsp. <a href="http://store.nutiva.com/aff/BDEE4790FE32650135E9BE5C22051500/index.html" target="_blank">coconut oil</a></p>
<p>Directions:<br />
1. Put coconut and coconut oil into a food processor. Grind.<br />
2. Occasionally you may need to scrape down the sides. Grind some more.<br />
3. Grind the coconut until it becomes runny. The transformation is so cool (I&#8217;m easily amused)! It shocked me that all the dried up coconut could become liquidy in texture!! Mine never became completely smooth, but for this recipe, it doesn&#8217;t need to be. Just make sure it is somewhat liquidy and runny.<br />
4. The end! Now go make some Almond Butter Coconut Bark!!</p>
<p>*I had to make my coconut butter in two batches as I have a smaller food processor. If 4 1/2 cups doesn&#8217;t fit in your food processor, don&#8217;t try it. Do it in smaller batches <img src='http://cdn.unrefinedkitchen.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

				<content:encoded><![CDATA[<p>Butterfingers are one of my FAVORITE candy bars. Almost since we started eating paleo (2 years ago) I&#8217;ve been trying to create an almond butter version of butterfingers that uses unrefined sweeteners&#8230;and here it is!! I haven&#8217;t done a lot with coconut sugar, but they seemed to help create a much better texture than that of purely &#8220;honey-sweetened&#8221; Almond Butterfingers. Besides these my <a title="Homemade Honey-Sweetened Marshmallows" href="http://www.unrefinedkitchen.com/2011/10/04/homemade-honey-sweetened-marshmallows/" target="_blank">Honey-Sweetened Marshmallows</a> and these candies (that I have probably experimented with about 15 times), I really don&#8217;t have much experience with making candy with a candy thermometer&#8230;so I hope my directions make sense!! And I will say, these definitely don&#8217;t taste the same as butterfingers as there isn&#8217;t any peanut butter in them&#8230;but we love them and the coconut sugar made a big difference on the texture&#8211;they have a better &#8220;crunch&#8221;!</p>
<p>If you want to avoid the refined sugars completely or aren&#8217;t a big fan of chocolate&#8211;they taste great without it! And they make a great <a title="Vanilla Ice Cream (with Coconut Milk)" href="http://www.unrefinedkitchen.com/2011/08/22/vanilla-ice-cream-with-coconut-milk/" target="_blank">Coconut Milk Ice Cream</a> topping when you chop them up!</p>
<p>Ingredients:<br />
1/3 cup honey<br />
1/2 cup <a href="http://store.nutiva.com/aff/EBE8F474924E8F013D7667A79F051500/index.html" target="_blank">coconut sugar</a><br />
1/3 cup water<br />
3/4 cup <a href="http://www.amazon.com/gp/search/ref=as_li_qf_sp_sr_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;index=aps&amp;keywords=maranatha%20almond%20butter&amp;linkCode=ur2&amp;tag=theunrekitc-20" target="_blank">almond butter</a><br />
1/2 tsp. baking soda<br />
1/4 tsp. salt<br />
1/2 tsp. vanilla<br />
(Optional for chocolate coating):<br />
3/4 cup (approximately) dark chocolate chips<br />
1/2 tsp. <a href="http://store.nutiva.com/aff/BDEE4790FE32650135E9BE5C22051500/index.html" target="_blank">coconut oil</a></p>
<p>Tools:<br />
-Candy Thermometer<br />
-Small to medium saucepan (try to avoid using a super-thin/cheap one&#8211;it will be more likely to burn)<br />
-8&#215;8 square baking pan<br />
-Parchment paper<br />
-Double boiler (or some other way to melt your chocolate chips)</p>
<p>Directions:<br />
1. Prepare 8&#215;8 baking pan by lining it with parchment paper. (I have tried this greasing the pan but they don&#8217;t come out as nicely. They come out in pieces instead of bars.)<br />
2. Combine honey, <a href="http://store.nutiva.com/aff/EBE8F474924E8F013D7667A79F051500/index.html" target="_blank">coconut sugar </a>and water in saucepan. Bring to boil over medium-low heat stirring occasionally.<br />
3. Once the mixture has come to a boil, insert candy thermometer making sure the tip isn&#8217;t touching the bottom of the pan, but is in the liquid. Don&#8217;t stir the mixture once it is boiling.<br />
4. In the meantime, combine <a href="http://www.amazon.com/gp/search/ref=as_li_qf_sp_sr_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;index=aps&amp;keywords=maranatha%20almond%20butter&amp;linkCode=ur2&amp;tag=theunrekitc-20" target="_blank">almond butter</a>, baking soda, vanilla and salt in a small bowl.<br />
5. Cook until the candy thermometer reads 300 degrees.* Immediately remove saucepan from heat. Pour almond butter mixture into the saucepan and stir quickly to combine.<br />
6. Pour and spread the candy mixture into the 8&#215;8 pan lined with parchment paper (you need to work quickly&#8211;it starts to set really fast!).<br />
7. Within 5-15 minutes, take a sharp knife and cut the candy into desired sizes/shapes, but leaving it in the pan. This helps for when it is completely cooled, you can break the pieces apart easier into the sizes that you cut. I cut mine 4 rows one direction and 6-8 rows the other direction.<br />
8. Allow candy to cool completely. Lift the parchment paper out and carefully break apart the candies (where you cut them). Place on a plate in the freezer until you are ready to dip them.<br />
9. Melt the dark chocolate chips in a double boiler with 1/2 tsp. <a href="http://store.nutiva.com/aff/BDEE4790FE32650135E9BE5C22051500/index.html" target="_blank">coconut oil</a>.<br />
10. Dip the candy bars in the chocolate, shake off excess chocolate. Place on a parchment paper-lined plate or pan. Place in fridge to set. Keep refrigerated until ready to eat! Enjoy!</p>
<p>*If your liquid is about to boil over, try placing a wooden spoon across the top of the saucepan&#8230;it totally brought the bubbles down on mine!</p>

<p><strong>Cinnamon Crunchies (cereal or crackers)</strong></p>
<p>Ingredients:<br />
1 cup <a href="http://www.amazon.com/gp/search/ref=as_li_qf_sp_sr_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;index=aps&amp;keywords=bob%27s%20red%20mill%20almond%20flour&amp;linkCode=ur2&amp;tag=theunrekitc-20" target="_blank">almond flour</a> (I use <a href="http://www.amazon.com/gp/search/ref=as_li_qf_sp_sr_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;index=aps&amp;keywords=bob%27s%20red%20mill%20almond%20flour&amp;linkCode=ur2&amp;tag=theunrekitc-20" target="_blank">Bob&#8217;s Red Mill</a>)<br />
1 Tbsp. ground <a href="http://store.nutiva.com/aff/49E710D383127601398699AC4D051600/index.html" target="_blank">white chia seed</a> + 3 Tbsp. water (or 1 egg in place of the chia seed and water)<br />
1 Tbsp. <a href="http://store.nutiva.com/aff/BDEE4790FE32650135E9BE5C22051500/index.html" target="_blank">coconut oil</a>, softened<br />
1 Tbsp. honey<br />
1 tsp. cinnamon<br />
1/4 tsp. salt<br />
(optional for sprinkling on top):<br />
1/4 tsp. cinnamon<br />
1 1/2 tsp. <a href="http://store.nutiva.com/aff/EBE8F474924E8F013D7667A79F051500/index.html" target="_blank">coconut sugar</a></p>
<p>Directions:<br />
1. Preheat oven to 350 degrees.<br />
2. Mix together almond flour, ground chia, water, coconut oil, honey, 1 tsp. cinnamon and salt.<br />
3. Roll dough out between two pieces of parchment paper. (I rolled mine into a very thin rectangle approximately 10&#8243;x15&#8243;&#8211;it doesn&#8217;t have to have perfectly straight edges&#8211;mine weren&#8217;t even close to straight!)<br />
4. Carefully peel off the top layer of parchment paper. Place the bottom layer with the dough unto a baking sheet.<br />
5. (Optional) Combine 1/4 tsp. cinnamon with 1 1/2 tsp. coconut sugar and sprinkle some of the mixture on top of the dough. I used just a small amount of the mixture!<br />
6. Bake for 8-10 minutes. Remove from oven and cut into squares (I used a pizza cutter and cut mine into small, Cinnamon Toast Crunch sized pieces).<br />
7. Return pan to oven and bake 2-5 more minutes or until lightly browned. Because I didn&#8217;t get my dough perfectly even in thickness, the outer pieces were done first. I removed the pan every couple minutes and would take off the pieces that were lightly browned.<br />
8. Place cereal/cracker pieces unto a cooling rack to cool completely.<br />
9. Eat plain or in a bowl with your favorite milk! (I like almond milk.)</p>
<p>*The &#8220;crunchiness&#8221; of your crackers/cereal depends on how thin you roll it out and how long you bake it. There is a fine line between &#8220;done&#8221; and burnt&#8230;so watch it carefully! The thinner you make it, the crunchier it will be.</p>

I contacted a bunch of companies and SEVENTEEN of those companies agreed to contribute and participate in this giveaway! So, this is going to be an uber-long post, but it is totally worth your time to check-out each of these companies! I am ecstatic to introduce (and re-introduce) these companies to you as a few of them were brand-new to me! I am also excited to share that I fell in love with multiple companies and their products and became an affiliate of them&#8230;more about that below!</p>

				<content:encoded><![CDATA[<p>The other day I thought it might be fun to look through my old recipe posts and see which ones were &#8220;pinned&#8221; on Pinterest or &#8220;liked&#8221; on Facebook the most. I was shocked to find a couple recipes pinned over 1,000 times! I thought I would share those recipes with you here, all in one place.</p>
<p>Thank you to all of you who support and follow my blog and for all the encouraging comments and messages! It is so fun to create and adapt recipes to fit the &#8220;paleo&#8221; way of eating that are still enjoyable for my family and I to eat.
