
The “blondies” won the Facebook vote of “first recipe to be posted on the new site” … so here it is as promised! It is kind of amazing that I even got a picture before the whole pan was devoured…enjoy!
Almond Butter Chocolate Chip Blondies
Ingredients:
1/4 cup Nutiva coconut oil
1/3 cup honey
1/4 cup almond butter
1 egg
1/2 tsp. vanilla
1 1/4 cups almond flour
1/2 tsp. baking powder
1/8 tsp. baking soda
1/2 tsp. salt
1/4 – 1/2 cup chocolate chips
Directions:
1. Preheat oven to 350 degrees. Grease 8×8 pan or line with parchment paper.
2. Combine wet ingredients in a large bowl. Mix well with an electric mixer.
3. Combine almond flour, baking powder, baking soda and salt in a medium bowl and whisk to combine.
4. Pour dry ingredients into wet ingredients and mix well with mixer.
5. Mix in chocolate chips and spread batter in greased 8×8 pan.
6. Bake at 350 degrees for 15-20 minutes or until toothpick inserted in the center comes out clean.

Bummer I’m sorry! Maybe it just needs to be cooked less? They are a bit more cakey than regular blondies but shouldn’t be too dry.

I would think you could. The flavor would probably be different but texture should be similar.

I made these for the first time tonight & used peanut butter! The “dough” was divine….they’ll be ready in just a few minutes! Hope i don’t eat the entire pan myself!

Have made these 4 times now…subbed the honey with pure maple syrup and added 1/4 cup coconut flour to the batter to make them more like bar cookies. Family eats the whole dish of them in minutes, they are our new go to choc chip cookie recipe. Thank you!!!!!!

You could try subbing almond meal or flour–the texture might be different but they should still taste good!

These are one of my favorite grain free desserts. I fixed them for a get together with some organic vanilla ice cream on top. They were a hit!! I’m thinking I need to stop looking at all the desserts to make;)

Okay, I had to try again! I skipped the egg, did raw maple syrup instead of honey and cut down to 1 cup almond flour-oh and a couple Tbsp. of ground chia seeds. So gooey! These were awesome!

I made these vegan by using:
1 tbsp flax seed meal + 3 tbsp water (to replace egg)
a mixture of half agave nectar and half black strap molasses for the honey
vegan chocolate chips
this was the first time I’d ever baked something gluten free (I always bake vegan) and I’m pleasantly surprised with the results!
